The Holiday Season

Hey Everyone! November and December have been super busy. I’m sure all of you can relate to the busyness of the holiday season.


Zoe and I took a trip to Connecticut in early November. It was a great trip! We got the chance to see a lot of Nate’s family. It also gave me a chance to really get to know some of the folks in Connecticut. It was a good trip. Zoe and I survived the trip just fine. The only time I almost lost it was when we were on the way back, and our three and a half hour flight didn't have air conditioning. We survived, though.

The week of Thanksgiving was the busiest! We started the week in Houston for the Texas Church Workers Conference. It was nice to see our Texas friends! We got to connect with the pastors and wives from our PALS group. We also got to visit with Phoebe the Comfort Dog. If you don’t know who the Comfort Dogs are, check out their website. Zoe LOVES dogs! She especially loved Phoebe the comfort dog. She was so excited!



We then continued on to Edmond, OK. This was a quick overnight stop on our way to Omaha for our dear friend, Katie Lane's wedding. We stayed with our friends Jon and Emma Meyer in Oklahoma. I worked at camp with Jon and we got to know both Jon and Emma when we were at Seminary.

While we were in Oklahoma, Zoe developed a low-grade fever. We decided to keep moving to Omaha and monitor her temperature as we went. About an hour and a half out of Omaha, Zoe's fever spiked above 102 degrees, which means that we had to get her urine checked. Because of her condition, this is the rule we have to live by. As a mother of a sick child, my crazy sets in at this point. Zoe is hot, and I am sobbing in the back seat of the car. As punishment for watching Steel Magnolias so many times in my lifetime, my inner M'Lynn Eatenton surfaces every time that Zoe gets the least bit sick. I become a crazy mess: ugly crying, stubbornness, and being bossy. Anyway, the only place that was open the night before Thanksgiving that could catheterize a baby was Omaha Children's Hospital. THEY WERE FANTASTIC! If you live near Omaha and you need good healthcare for your child, go there. Seriously. We were in a room within 10 minutes and out in three hours. This included them catheterizing her and running a test on her urine. Unfortunately, she ended up having a UTI. Poor baby, but we got her on antibiotics and she started feeling better by Saturday. She is a trooper.

My mom flew to Omaha and was able to spend Thanksgiving with us and take care of Zoe during the wedding festivities. It was so nice. We spent Thanksgiving with Katie and Elliot's families. It was great! We spent a good deal of time with Zoe's godparents, Katie, Marcus and Vanessa. Katie looked beautiful on her wedding day and we were able to have a great time spending time with friends and dancing.

On the way back, we stopped in Weatherford, TX. Our friends Tim and Darci Fraker live in Weatherford. This is a small town outside of Fort Worth. About an hour away from our destination, Zoe had the most extreme diaper blow-out of her life. I was blessed with the privilege of cleaning up this crazy mess in the bathroom of a Dairy Queen. Nothing like stripping a baby down, wiping out the car seat as best as you can and trying not to get yourself covered in poop to round out a 12 hour day of driving. Thank goodness we were stopping to stay with friends that had a washing machine. We had a great time visiting with Tim and Darci. Tim even made us a delicious breakfast in the morning. The next day we had a pretty simple drive back to McAllen.

December is a big month for us. Mine and Nate's birthdays are this month. Not to mention, Advent and Christmas keep Nate pretty busy. Luckily, the students I tutor have had some field trips which freed up some extra time for me. I have gotten back into baking and cooking a little bit in the past couple weeks. I love to cook and bake. I started keeping Food Network on during the day to get the creative juices flowing. Zoe taking regular naps has helped as well. So far I have made Chocolate Chip Cookies, Reese's Cheesecake Bars and Pioneer Woman's Salisbury Steak Meatballs.

I always say that if God gave me one gift in life, it was making Chocolate Chip cookies. There is a reason however, that I should never make them. I am addicted to them. I will eat them all of the time if they are there. Wake up, have a cookie. Get back from shopping, have a cookie. Make a bottle for Zoe, have a cookie. I can't stop. It's dangerous. This used to be full. Addiction is real people.



I made the Reese's Cheesecake Bars as part of our little family birthday celebration for Nate. He LOVES peanut butter and chocolate. He also loves cheesecake. Pinterest provided me with this lovely recipe. It was wonderful. I am not the biggest Reese's fan (I know, it's un-American), but this was good.



Some of you may know this, but I have a food intolerance to tomato sauce. It is very inconvenient. I have tried so hard to eat Spaghetti and Lasagna in my adult life and I end up with a terrible stomach ache. The only things that I seem to be able to eat are pizza with light sauce and ketchup. Ketchup has so much corn syrup, so it really doesn't bother me. Anyway, I am always looking for recipes that have meatballs, but no tomato sauce. Who doesn't love a meatball? They are really delicious. I refuse to give up on meatballs because of a silly food intolerance. Therefore, I found this Salisbury Steak Recipe that was fantastic. We are adding it to the rotation of meals. I served it with a side of roasted asparagus. We picky veggie eaters LOVE roasted asparagus.

Zoe is Nine Months!

Zoe is nine months! Nine months is a big month for her. She will wish both Mommy and Daddy happy birthday for the first time. She will also wish many of Mommy and Daddy’s friends happy birthday and Grandma Cox and Uncle Alex happy birthday. December is a big month in our family. Zoe will celebrate her first Christmas. Naturally, as a mom, I am feeling unnecessary pressure from no one but myself to make this Christmas extra special for Zoe. It is December 16th and I haven’t figured out what is going to make it extra special yet, so we’ll see. I am hoping to take her to see Santa. Hopefully, we will get a smiling photo or a great picture of her screaming to show people that she really does cry. We are still so thrilled to have her. She is a growing, healthy baby. Mommy wants her to grow but stop growing all at the same time. What happened to my little baby?

Zoe is Eight (and a half) Months!

Zoe is eight and a half months! She turned eight months when we were in Connecticut. I have been super busy since we got back and didn’t get a chance to update the blog. She is growing so fast we can’t even handle it. Last night she was up in the middle of the night and I got some little baby snuggles. I don’t get those as much anymore. Why do they grow up so fast?

Special Post: Flying Alone with a Baby

Special Post! Usually I just do my posts as updates for our family's life, but I took a trip where I flew alone with Zoe and I observed many interesting things.

Nate's family wanted to see Zoe, so they were gracious enough to fly Zoe and I out to Connecticut for a visit. This trip from Connecticut to McAllen consisted of an hour flight between McAllen and Houston, and then a three and a half hour flight between Houston and Hartford.

Some observations:

  1. The check-in counter: When you travel with a baby, you have more stuff than you could ever imagine. You start traveling with car seats, strollers, Pack N Plays, etc... Getting from the car to the check-in counter is a feat in itself.

  1. Security: If you're lucky, they will send you down the handicapped line and you can take your own sweet time because not many people are behind you. Did you know that they have you fold up the stroller and put it on the conveyor belt? I have flown for years. No idea. So I have to empty my pockets, take off my shoes, hope I put my ID back in my wallet, take out the vast amounts of baby liquids that I carry on, take off my jacket, put the carry on bag up, keep pushing all of this forward as I am doing it to keep the line moving, lift the stroller on to the conveyor belt, I feel like I should then do the hokey pokey and turn myself around because I look like a crazy person anyway. This is one of the places in the airport where everyone is worried about their shoes and belts, so they don't help the lady that is alone with a baby. I don't mind, I let people go around me. When I get to the other side, the best part is watching the male TSA agents try to unfold the stroller. The guy in Hartford had it down. Other times, I smile and try to explain while the female TSA agents laugh and make fun of the guys. Poor guys. Those strollers are not easy and they make about 700 different kinds.

  1. People that can't believe I am alone with the baby: So many people would tell me that they couldn't believe that I flew alone with the baby. For a seasoned traveler who has flown with a baby before, but not alone, it wasn't a huge deal. There was a point during the three and a half hour flight on the plane with broken air conditioning where I almost cried because we were both so hot, but that was the worst it got. These are acting like I should be knighted by the Queen of England because of my accomplishment. It is a fascinating experience, but not impossible.

  1. Baby Makes Friends: The baby immediately makes it so that it is easy to make friends on the plane and in the airport. Well, Zoe does, she smiles at everyone. If I, God-willing, have another one someday, I'm sure it will be a terror. EVERYONE talks to me. I don't mind this because I am an extrovert, but some people may not like it. I get, "Oh, I have two at home." and "I have a six-month old granddaughter. The food service people went crazy. I had a lady who was working in the back of the Whataburger in the airport walk all the way out to me while I was waiting to see Zoe better. The people at the McDonald’s were just mesmerized by her and then the lady sitting at the tables eating her breakfast chimes in with something like, “She is just the sweetest. The best and funniest side of people comes out when they see a baby.

  1. The Tram: In large airports, they have trams that move people from terminal to terminal. People are very helpful on the plane, but not here. On the tram, it is every man for himself. I saw a man that saw the doors were closing and almost lost his luggage because it got caught in the door. This happened three times and every time it delayed the tram. People would run in, get stuck and then the doors at to stay open longer. The next tram comes in two minutes. Chill people. When getting off the tram they act like they are running from Zombies. It is like the Wild West getting on and off of these things.

  1. Damsel in Distress: People transform at the gate and in the airplane to the most helpful people in the world, men women, flight attendants. Everyone is so helpful. It is so refreshing. One flight attendant crawled under the seats to get Zoe's pacifier and then sanitized it. Men constantly offer to carry my carry-on bag into the plane and lift it into the overhead bin. After the flight, everyone reassures me that she did great and that she is such a good baby. On two different flights I had people stop me after to tell me how good she did. If you need to restore your faith in humanity, travel alone with an infant on a plane. People are actually kind and generous.

  1. The Airport: The airport is crazy place where normal rules don’t apply. People are eager to help strangers, people are willing to have a conference call in the middle of a busy Gate waiting area, but my favorite thing that I think is absolutely ridiculous is that it is acceptable to drink at ANY time in the airport. I got off the plane in Houston at 10:00 AM and there were people polishing off a beer. WHAT? I am not against a good glass of wine, but 10:00 am? All I could think of was this passage from Acts 2:15, “These people are not drunk, as you suppose. It’s only nine in the morning!” WRONG! They are toasted! I guess everyone has their own way of dealing with the fear of flying, some people listen to music or watch movies on the flight, some people take Dramamine, and some take the edge off with a little liquid courage. I prefer distracting myself by talking to my neighbor. I don’t fear flying, but landing makes me nervous.

Here are a few tips that I have found helpful:
  1. BUY A CAR SEAT BAG! On every airline, the car seat checks for free. Buy a bag to put it in, they sell them at Babies R Us. It leaves plenty of room to stuff extra items in there and you don’t have to pay for it.
  2. Take the stroller, if for nothing else, to help you carry all of your stuff through the airport.
  3. Wear your baby when getting on and off the plane. This frees up your arms to carry all of the other mounds of stuff your baby requires.
  4. Don’t be afraid to ask for help.
  5. Breathe. You will get through it. It is actually a lot of fun. People will love your baby and they will help you.

All in all it was a very fun trip. I love airports. I love flying. I am so grateful to all the people who helped me out on this trip.
